Bread baking -
Jan. 31st, 2010 09:50 pmBeen doing this here recently - last week's foray didn't come out as well as I'd hoped, thus no recipes. This week, however, hoo-rah! they came out good!
I think this is now my most favorite bread ever - King Arthur Flour Oatmeal Bread recipe - as a link and I'll list it here:

I'm partly lazy and partly not able to stir stiff dough by hand (bad shoulders), so mom's Kitchen-aid mixer got a hefty workout, b/c I also made
synecdochic's basic yeast bread of awesome, so that thing was working quite a lot. It's a very cool machine (wish I had m'own) b/c it'll knead the dough too! Cuts the work time down by quite a bit. Still the long-ass waiting time, but less working time, which is good.
Things I've discovered while making bread: bread flour yields fantastic results! good yeast is an absolute must! (this is part of why last week was a partial bust) winter sucks when it makes your kitchen 50 degrees! (which is 20 degrees colder than the rest of the house and not a good temp for dough to rise, hence use of ye olde oven to 'cheat' *g*)
